Delicious Blueberry Muffins
Gather
  • 1 tablespoon vinegar
  • 7/8 cup milk
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups thawed or fresh blueberries
Go
  1. Grease a muffin pan and set oven to 400 degrees F.
  2. In a small bowl, add milk to vinegar to make one cup. (You may need to add a little more milk.) Set aside.
  3. Mix dry ingredients in a large bowl.
  4. Stir in eggs, milk mixture and oil.
  5. Gently stir in blueberries.
  6. Pour batter into 12 muffin cups.
  7. Bake for 15 to 20 minutes until tops of muffins are lightly browned.
