Delicious Blueberry Muffins
Gather
- 1 tablespoon vinegar
- 7/8 cup milk
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup vegetable oil
- 1 1/2 cups thawed or fresh blueberries

Go
- Grease a muffin pan and set oven to 400 degrees F.
- In a small bowl, add milk to vinegar to make one cup. (You may need to add a little more milk.) Set aside.
- Mix dry ingredients in a large bowl.
- Stir in eggs, milk mixture and oil.
- Gently stir in blueberries.
- Pour batter into 12 muffin cups.
- Bake for 15 to 20 minutes until tops of muffins are lightly browned.
