Crunchy Lemon Snow Bars
Gather
- 1/2 cup butter
- 1/2 cup brown sugar, packed
- 1 cup all-purpose flour
- 1 lemon
- 2 eggs
- 3/4 cups sugar
- 1/2 teaspoon salt
- 1 cup coconut
- 1 cup pecans, chopped
- powdered sugar

Go
- In a small bowl, blend butter and brown sugar until smooth. Cut in flour and press into the bottom of an ungreased 9-by-13-inch pan.
- Bake for 10 minutes at 350 degrees F and remove from oven.
- Grate the lemon for 2 teaspoons of lemon peel, and squeeze for 2 tablespoons of lemon juice.
- Beat the eggs in a mixing bowl and add sugar, lemon peel, lemon juice, salt, coconut and pecans.
- Pour mixture over baked crust and return dish to oven. Bake for 25 minutes.
- Cool slightly and sift powdered sugar over top. Slice into squares to serve.
