Grandma's "Special" Apple Pie
Gather
  • 4 cups sliced zucchini (about one large zucchini)
  • carrot peeler
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons cream of tartar
  • dash of nutmeg
  • 3 tablespoons flour
  • 2 tablespoons lemon juice
  • dash of salt
  • 9-inch piecrust (top and bottom)
  • butter
Go
  1. See if the zucchini is ripe by piercing the skin with your thumbnail. This should be easy. Use a carrot peeler to remove the skin.
  2. Ask a parent to cut the peeled zucchini in quarters lengthwise.
  3. Remove the seeds and slice crosswise.
  4. Boil quickly, just until tender and crisp.
  5. In a separate bowl mix the sugar, cinnamon, cream of tartar, nutmeg and flour.
  6. Mix the lemon juice and salt with the cooked zucchini.
  7. Add the zucchini to the other ingredients and mix well. Mixture will be runny.
  8. Pour the filling into the piecrust. Dot with butter and add top crust. Bake at 400 F for 40 to 50 minutes.
